I get don't have to be a genius to make and enjoy this Stupid Chicken Casserole. It is so easy, and full of flavor, and of course, my favorite thing about's a "one pot wonder". Just throw it all together, pop it in the oven, and you're done. Add some green beans and a tossed salad and you've got a great week night dinner without any of the fuss.

Hahahaa! I loved the name of this dish so just had to make it for our lunch today and it really was stupidly easy and very tasty too. The only change we made was to add some crumbled crispy cooked bacon into the ingredients (because there was a little left over from breakfast) and I mixed the fried onions into the chicken mixture before cooking, instead of on top at the end. Try it and enjoy!

Wow, I don't think this recipe could really get much easier. I love that the idea is quick and simple for a day that you know is going to be super hectic and you just want to come home to a hot meal and go to bed. Thanks for the ideas and coming up with a simple yet tasty dish.
