Paula's Coveted Chicken Pot Pie is a comfort food classic and is made even better with the Paula Deen stamp of approval. The Southen queen of cooking inspired this dish and we're sure your family will love it just as much as we do. This chicken pot pie recipe could not be easier. With so few ingredients and not much prep work, you'll have dinner on the table in no time at all. We wouldn't be surprised if this dish becomes a weekly staple in your home during the winter months when comfort dishes like this rule the world.

Ingredients

  • 1 (16-ounce) package frozen stir fry vegetables, thawed
  • 2 cups cut-up, cooked chicken
  • 1 (10-3/4-ounce) can condensed cream of chicken soup
  • 1 cup Bisquick mix
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Preheat oven to 400 degrees F.

  2. Mix vegetables, chicken, and soup in ungreased 2-quart casserole dish.

  3. Stir remaining ingredients in small bowl with fork until blended. Pour into casserole dish.

  4. Bake for 30 minutes or until top of pie is golden brown.

One of the things I've always loved about pot pie is the crust...can the Bisquick mix be used on the bottom as well to form a crust or would it burn? I really like that stir fry veggies are used in this recipe and I'm betting if instead, you substituted a mushroom medley with some cheese it would be amazing!

A simple hearty meal that everyone in the family will enjoy. This is one of those wonderful quick and easy dishes to prepare and then you pop it into the oven and spend valuable family time while it cooks itself. Bisquick mix is not available here in South Africa so we had to be a little bit inventive but it turned out fine. The best part is that this dish tastes good so you can make it again and again.
