If you like pasta and mashed potatoes, this is the casserole for you. Instead of actually making pierogis, this recipe is easier and has all the flavors. For a healthier version of this dish, I would use turkey bacon, lite cream cheese spread, and reduced fat shredded cheese. To ensure that the pasta has a good consistency in the casserole, the lasagna noodles should be drained while they are still underdone because they will continue to cook in the oven.
