Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small head cabbage, shredded
  • 1 yellow bell pepper, seeded, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 14 ounces can cherry tomatoes
  • 10 ounces smoked sausage, cut into half moons
  • 1 cup mozzarella cheese, shredded

Instruction

  1. Preheat oven to 400F.

  2. Heat olive oil and butter in a skillet.

  3. Add the bell pepper, cabbage, onion, and garlic. Season with salt and pepper.

  4. Cook for 10 minutes, stirring continuously.

  5. Stir in the cherry tomatoes together with the juice. Finally, add the smoked sausage.

  6. Simmer for around 10 minutes.

  7. Once cooked, transfer to a casserole dish and top with the shredded mozzarella.

  8. Bake for around 15-20 minutes or until golden.

  9. Sprinkle with chopped parsley and serve warm.
