No-Fail Potato Casserole

This No-Fail Potato Casserole is such a snap to make, you really can't go wrong! Potato casserole dishes like this one round out any meal to perfection. This is an easy casserole recipe for all occasions.

Cooking MethodOven, Casserole

Ingredients

  • 8 large potatoes, peeled
  • 1 large onion, grated
  • salt and pepper, to taste
  • 1 pint half and half coffee creamer
  • 1 cup butter, melted
  • paprika (for garnish)

Instructions

  1. Pre-heat oven to 350 degrees F.
     
  2. Boil potatoes; cool and grate. Add the rest of the ingredients and mix well.
     
  3. Place in a 9 x 13-inch baking dish (or casserole). Sprinkle with paprika.
     
  4. Cover with foil and refrigerate overnight or for at least 24 hours. Bake for 45 minutes.

If you like preparing meals ahead of time, this recipe is for you since it requires overnight refrigeration. Potato dishes are comfort food to many people so this will be popular at the dinner table. For a lighter version of this casserole, I would use fat free half and half. Also, reduced fat shredded cheddar cheese would be a good addition to this recipe.
