Cheddar Potato Casserole

Savory mashed potatoes are laced with a cheddar cheese sauce, sour cream and green onion. Baked to a golden turn, this Cheddar Potato Casserole is a real crowd pleaser. Not only is it one of the easiest potato casserole recipes, it's the cheesiest.


Recipe Tip: To make 3 cups mashed potatoes, place 2 pounds potatoes, peeled and cut into 1-inch pieces, into a 3-quart saucepan.  Add water to cover and heat over medium-high heat to a boil.  Reduce the heat to low.  Cover and cook for 10 minutes or until the potatoes are tender.  Drain.  Mash the potatoes with 3/4 cup milk and 2 tablespoons butter.

  • 3 cups prepared mashed potatoes
  • 1 can (10 3/4 ounces) Campbell's® Condensed Cheddar Cheese Soup
  • 1/3 cup sour cream or plain yogurt
  • generous dash ground black pepper
  • 1 green onion, chopped (about 2 tablespoons)


  1. Preheat oven to 350 degrees F.

  2. Stir the potatoes, soup, sour cream, black pepper and onion in a medium bowl. Spoon the potato mixture into a 1 1/2-quart baking dish.

  3. Bake for 30 minutes or until the potato mixture is hot.

I have actually made this basic dish in so many variations it's unreal, each one as delicious and creamy as the last one. But I think this one is my absolute favorite of the ways I can make a potato casserole, although usually to save time I just simply use premixed mashed potato mix, make it up quick, and then use that. Comes out about the same, taste-wise, too, depending on the brand of mashed potato spuds used.

Is there another option instead of that soup? I can't stand the taste of that stuff! Yuck!

It would be of great help if the rest of the recipe was there. I already know how to make mashed potatoes but there are no directions for assembly and cooking time!
