We always have a lot of zucchini/squash from the garden. I shredded about 30 bags last year with 2 cups in each bag. I love that I found this recipe. I am definitely going to try this. I will just let my shredded zucchini thaw out and drain before cooking into the bread. It should work just like fresh zucchini. I can't wait to try this now!

Ok, I cannot wait to try out this recipe to see if it is close to my mom's zucchini bread. I used to love when she would make the bread because we would slice it up and slather it with lots of butter and have it for breakfast because it was so sweet.
