This Pineapple Carrot Zucchini Bread is the perfect quick bread recipe now that Fall is in the air and the weather is turning cooler. Not that it wouldn't be great any time of year, I think the cinnamon adds a taste of fall. This quick bread has so many wonderful flavors, coconut and pineapple, carrots and zucchini, and spices like cinnamon and ginger, that come together perfectly.
