Don't be afraid of yeast bread! The rising and punching down process is not difficult. Just let the bread rise while you go about your other work. You can also make 2 batches and put the dough balls in a covered bowl in the refrigerator and make them the next day or so. True, this is plain white flour bread, but once in a while it's a comfort food you just gotta have! Make sure the rest of the meal has some fiber and nutrition in it and you will balance out the meal.

These are THE best rolls ever! Light and fluffy just like the photo, and they taste phenomenal. Love the simple ingredient list.
