The Amish are known for their cooking and baking, sure, but this recipe for Unbeatable Amish Pineapple Bars is one of the more unexpected treats you'll find in the Amish cooking repertoire. Made with crushed pineapple, coconut extract, lemon juice and more, these fruity dessert bars are sweet and moist and everything you'd dream them to be. Topped off with an incredible homemade cream cheese frosting, these pineapple treats are pretty irresistible, so make them for your next get-together with family or friends!

pineapple and coconut are so wonderful together! I will love this dish but my family dislikes coconut so I will have to make this to bring to someone's party or cookout. If I make it to keep, I will be forced to eat all of it. Not that that sounds too horrible!

This looks and sounds so yummy. The pineapple will make it so moist. I would make this to take somewhere. Somewhere that everyone would appreciate the coconut and walnuts on top. That or only add that to half of the pan. OR eat all the bars by myself. I don't like to sit and eat canned pineapple, but it is good used in recipes.
