My wife and I both love spanakopita, and this recipe is a wonderful way to make something extremely similar very easily. I can't overindulge on spinach due to medication, so these little bite-sized morsels are a great way to treat myself while using some portion control. These would also be great for any upcoming potlucks. I know they wouldn't last long at all.
