Cheesy Creamed Corn
"This Cheesy Creamed Corn is a delicious summer recipe! From the mild onion flavor in the chives to the sweetness of fresh summer corn to the creaminess from the cheese, this recipe is definitely a keeper. We typically keep a can of creamed corn in the pantry as it’s an easy and comforting side dish. It’s delicious. However, the homemade version is much better – especially if you can get your hands on fresh, local corn. I like my creamed corn a little “chunky” with some of the kernels left whole. To achieve this, just puree about half of the corn mixture and then mix it back in with the whole kernels. (If you prefer a completely smooth version of creamed corn, then just puree all of the corn.)"
