Hobo Hamburger Stew

Stew recipes are great when want a hearty meal that will warm you up. Hobo Hamburger Stew is a budget friendly recipe that is made with ground beef, onions, celery, carrots and potatoes. Easy to make and absolutely delicious, you'll want to make it for dinner every night. Serve with your favorite homemade biscuits or crackers, and don't leave one bite in the bowl.

To thicken the stew, mix 2 tablspoons of cornstarch in a cup of water and then pour into stew.

  • 1 pound ground beef
  • 1 onion, cut into chunks
  • 2 stalks celery, sliced
  • 2 or 3, peeled and sliced carrots
  • 5 to 8 potatoes, peeled and cut into chunks
  • 1 small can green peas
  • salt and pepper to taste
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

  1. Brown the ground beef well in a large pot. Remove and drain, discard drippings.
  2. Return browned beef to pot, add beef broth, salt and pepper, and herbs and bring to a boil.
  3. While this heats, cut onion & celery and add to pot. Keep the water hot enough so that it boils while other ingredients are being added.
  4. Add additional water as necessary to keep ingredients covered.
  5. Add the carrots and boil while you peel & cut the potatoes. Add potatoes and green peas; simmer, stirring occasionally, until vegetables are done.
  6. Serve with saltine crackers, cornbread or biscuits.
