Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups buttermilk
  • 1/4 cup melted butter, slightly cooled
  • 1 cup yellow cornmeal

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Lightly grease a 9 x 12-inch glass baking dish.
     
  3. Sift together the flour, baking powder, baking soda, and salt and set aside.
     
  4. In a separate bowl, beat the eggs, then beat in the sugar.
     
  5. Mix in the buttermilk until blended, then add the melted butter.
     
  6. Add the flour mixture to the wet mixture; mix well.
     
  7. Add the cornmeal and blend thoroughly.
     
  8. Bake for 25 to 30 minutes. Serve warm.

This recipe is simple and easy to follow. My family loves cornbread and I am always looking for a good quick and easy recipe. I have had recipes using baking powder only or baking soda only with milk or buttermilk, but not baking soda and baking powder. This is my kind of recipe, a double punch of rising agents to make it nice and fluffy. I think I will make cornbread tonight!

Cornbread is one of my favorite foods in the world (and I love food). This recipe was perfectly soft and yet had almost a crust on top. It tastes like your standard Jiffy cornbread, but with more flavor and moist texture to it. I loved it.
