Here's a fantastic buttermilk cornbread recipe. It's sweet and moist, and it pairs nicely with chili, soup, or just about any warm meal. Serve it warm and pat on a little butter. Mmmm! Cornbread is really great any time of the year. It's just as delicious at a summer barbecue as it is at Thanksgiving dinner. You can't say that about every type of food! Cooking Time30 min

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups buttermilk
  • 1/4 cup melted butter, slightly cooled
  • 1 cup yellow cornmeal

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Lightly grease a 9 x 12-inch glass baking dish.
     
  3. Sift together the flour, baking powder, baking soda, and salt and set aside.
     
  4. In a separate bowl, beat the eggs, then beat in the sugar.
     
  5. Mix in the buttermilk until blended, then add the melted butter.
     
  6. Add the flour mixture to the wet mixture; mix well.
     
  7. Add the cornmeal and blend thoroughly.
     
  8. Bake for 25 to 30 minutes. Serve warm.

This recipe is simple and easy to follow. My family loves cornbread and I am always looking for a good quick and easy recipe. I have had recipes using baking powder only or baking soda only with milk or buttermilk, but not baking soda and baking powder. This is my kind of recipe, a double punch of rising agents to make it nice and fluffy. I think I will make cornbread tonight!

This cornbread recipe was great. I'd use more butter, but that's just me!

Cornbread is one of my favorite foods in the world (and I love food). This recipe was perfectly soft and yet had almost a crust on top. It tastes like your standard Jiffy cornbread, but with more flavor and moist texture to it. I loved it.

I really enjoyed this cornbread. It was incredibly moist. I would add some extras like fresh corn or bacon to the batter next time.

I had the pleasure of making this recipe and it was a hit! You can make this in only a few minutes but it tastes so good! My suggestion is to serve this cornbread warm and add some butter! I would also add it yummy extras like bacon and jalapenos. Yum!

This tastes like Jiffy cornbread mix out of the box, which is a whole lot easier to make

I like yellow cornmeal the best. I also like moist cornmeal. I'm saving this recipe for the future. I am always looking for new corbread recipes.
