Quick and Simple Tropical Bread

Whip up a few loaves of this Hawaiian-inspired bread next time you need something soft and sweet. This recipe for Quick and Simple Tropical Bread includes crushed pineapple and coconut for a tropical flavor that's refreshing all year. Quick bread recipes are great for when you want to whip up something sweet and throw it in the oven to bake. After an hour of baking, you'll have deliciously moist and flavorful bread.

Ingredients

  • 1 can crushed pineapple
  • 1 (10-ounce) package moist coconut
  • 4 eggs
  • 1 1/2 cup sugar
  • 4 cups all purpose flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Combine pineapple and coconut in mixing bowl. Add eggs (beaten until light) and sugar. Mix well.
     
  3. Sift flour, measure, then sift again with salt and baking soda.
     
  4. Add to the first mixture. Mix until well blended.
     
  5. Pour into three greased 5x9-inch loaf pans. Bake for 1 hour. Remove from oven and turn out on wire racks. Serve hot or cold.

would like to make this too but not sure of size of can of pineapple and if you need to drain it first.

It is probably a large can but it would be nice to know for sure>
