Famer's Hoe Cakes

- 1 1/2 cup corn meal
- 1 cup all-purpose flour
- 1/4 cup oil
- 1 1/4 cup buttermilk
- 1/3 cup sugar
- 2 eggs, beaten
- 1 teaspoon salt
- 1 teaspoon baking soda
Combine cornmeal, flour, sugar, salt and soda in medium bowl. Add eggs, oil and buttermilk. Stir just until ingredients are moistened.
Pour into heavily oiled skillet 1/4 cup of batter for each hoe cake.
Fry over medium-high heat 1 or 2 minutes or until golden brown on each side. Use additional oil if necessary.
- Drain on paper towels. Serve immediately.
