I frequent a great seafood restaurant here in South Africa and the lemon butter was so good I asked the chef for the recipe. He actually came to my table and gave it to me. It is so easy! Take 250 g butter. Melt the butter to the point of where it begins to bubble up the sides of the saucepan. Then add in 500 ml of single cream. If you cut this recipe down you must always use double the amount of cream to butter (so 125 g butter = 250 ml cream). Mix together and allow to boil until it rises in the saucepan and then add in your lemon juice. I use four teaspoons in 250 g of butter but you can add it to your taste. That's it! Easy peasy.

Do you use one ounce of butter or one pound?
