Mamm's Best Potato Salad

Ingredients

  • 8 medium potatoes
  • 2 onions
  • 1 teaspoon flour
  • 10 strips bacon
  • pepper, to taste
  • 1 teaspoon sugar
  • 1 cup vinegar + water
  • celery seed, to taste

Instructions

  1. Peel the potatoes and cut into slices. Boil until soft.
     
  2. Fry bacon until semi-crisp. Remove from pan and save, leaving the fat in the pan.
     
  3. Fry the flour, sugar, and celery seed in the fat until smooth and bubbly.
     
  4. Add the vinegar-water and bring to a boil.
     
  5. Add potatoes, remove from heat, cover until ready to serve. Add bacon strips before serving.

This salad looks interesting. I would imagine that you could eat it hot or cold. It is true that this potato salad is full of hearty flavor with the fried bacon and onions. I would add some frozen peas before removing from the heat to add in a bit of sweetness.

1 cup vinegar + water...how much water???
