Best Bread Crumb Griddle Cakes

The key ingredient in this recipe for Best Bread Crumb Griddle Cakes is two cups of stale bread crumbs. It's a great way to use up those leftovers that you wouldn't know what to do with otherwise. A cheap and easy breakfast idea that's also great for dinner, this is one of those recipes from the Great Depression era that's stuck around because it's classically delicious. Serve these yummy griddle cakes to your family and they're sure to be begging you for seconds!

Ingredients

  • 2 cups stale bread crumbs
  • 2 eggs
  • 1 1/2 cup scalded milk
  • 2 tablespoons butter
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1 tablespoon sugar

Instructions

  1. Soak bread crumbs in milk and melted butter.
     
  2. Add egg yolks and beat well.
     
  3. Sift flour with baking powder, salt and sugar and blend in liquid mixture.
     
  4. Fold in stiffly beaten egg whites and drop mixture by spoonfuls on a greased, hot griddle.
