Blueberry Muffins


  • 1 cup canned blueberries
  • 2 tablespoons sugar
  • 2 cups wholemeal flour
  • 3 teaspoons baking powder
  • 1/2 cup sugar
  • 1 cup milk
  • 1 egg, beaten
  • 2 tablespoons melted butter/margarine


Mix blueberries with sugar and set aside. Sift flour and baking soda into bowl and mix with sugar. Make a well in the centre and add the rest of the ingredients. Mix lightly, just so everything is moist. Almost fill greased muffin tins and place in a moderately hot oven for 20-25 minutes. Makes about 11-12
