Banana Walnut Muffins

This healthy banana muffin recipe is a great one for newcomers to cooking. Fast and easy, it will be sure to please your family. This banana muffin recipe is great for nut lovers as well thanks to the addition of walnuts. Make these for the monkeys in your life!

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 large eggs
  • 2/3 cup milk
  • 6 tablespoons margarine, melted
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon vanilla
  • 1 1/2 cup mashed bananas (2 to 3 ripe bananas)
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Sift together flour, baking powder, and salt. Set aside.
     
  3. Combine eggs, milk, and melted margarine in a bowl.
     
  4. Mix well, then beat in the brown sugar and vanilla.
     
  5. Add dry ingredients and mix slightly. Stir in bananas and nuts.
     
  6. Combine, but do not overmix; the batter should be lumpy.
     
  7. Divide among lined cupcake tins.
     
  8. Bake for 20 to 25 minutes or until toothpick comes out clean.
