School is starting soon and I am looking for some fast breakfast options for running out the door as I have 3 different schools to go to. I do not like the kids grabbing junk to eat in the morning and these bacon cheddar muffins will be great. I know my grands like cheese,bacon and eggs. Seems quick enough to whip up and they can be baking while I get up and then eat them on the go and way to school. Thanks for recipe.

I love these muffins. They are a nice change from the fruit or sweet muffins. I actually make these a lot. I do use bacon grease from cooking the bacon in the batter instead of butter. Sometimes I use a mixture of cheddar and mozzarella. They are good warm from the oven or at room temperature.

What a great little recipe for a quick breakfast! I'd enjoy trying these with a bit of crumbled sausage or diced Canadian bacon. I like the idea of using spinach and feta and want to try that as well. I'm somewhat restricted on spinach consumption due to taking a blood thinner, but it would use such a small amount that it wouldn't be a problem.

These sound quite delicious! The best part is they have a combination of really great breakfast ingredients (bacon, cheese, eggs). I think a nice alternative to this recipe would be substituting shrimp and herbs for the bacon, cheese and eggs. Dried shrimp works well if it's blended in a little water first.

I don't have a real big sweet tooth, so I always enjoy seeing breakfast and muffin recipes that take a savory rather than sweet approach. You can pretty much clean any leftover veggies or meats that you have laying around in your fridge and add them to these muffins and they will turn out great. They are a great thing to have on hand for the kids, and are easily portable.

These bacon cheddar egg popovers are quick, easy, and so savory! Some other good flavor combinations for this base may be spinach with feta, ham with broccoli and cheese, or any other substitutions your family would like! These are great for a large breakfast party but be sure to note that the recipe only makes 6 popovers so you'll need a lot of eggs!
