Apple Cheddar Muffins

Apple Cheddar Muffins are one tasty treat. This is a great recipe for those who love to mix breakfast muffins and cheese.

Ingredients

  • 1/2 cup shortening
  • 1 cup apples, finely chopped
  • 1/2 cup sugar
  • 2/3 cup grated cheddar
  • 3/4 cup quick cooking oats
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1 1/2 cup flour
  • 3/4 cup milk
  • 1 teaspoon baking soda
  • 12 to 15 thin apple slices
  • 1 teaspoon baking powder
  • melted butter
  • 1/2 teaspoon salt
  • cinnamon-sugar mixture

Instructions

  1. Preheat the oven to 400 degrees F.
     
  2. Cream the shortening and sugar together and add the eggs, one at a time, beating well after each addition.
     
  3. Combine the flour, baking powder, baking soda, and salt in a mixing bowl, mix lightly.
     
  4. Gradually stir the flour mixture into the shortening mixture.
     
  5. In this order, add the oats, cheddar and pecans, and chopped apples, mixing well after each addition.
     
  6. Gradually add the milk, stirring until all the ingredients are just moistened.
     
  7. Grease the muffin pans and fill each cup 2/3rds full of batter.
     
  8. Dip the apple slices in the melted butter and then into the cinnamon-sugar.
     
  9. Press 1 apple slice into the top of each muffin.
     
  10. Sprinkle lightly with cinnamon-sugar and bake for 25 minutes in the preheated oven, or until golden brown.

I would recommend adding them immediately after the pecans and have updated the recipe to reflect that.

Do you put the chopped apples in with the dry ingredients or the wet? This recipe does not mention the chopped apples in the directions.
