"Since I went gluten-free, there are a few adjustments I have made to the recipe from the version my mom makes. the main one being that I do not thicken the enchilada sauce with flour. We used to brown flour in a bit of oil in a sauce pan and then add a large can of enchilada sauce. All of that is a no-go when you’re gluten-free. The problem with canned sauces is that none of them ever tastes that good because, well, grandmas didn’t use canned sauce back in the day!"

I had never encountered the idea of a flat enchilada before. It looks really interesting and it reminds me of some of the stacked tortilla dishes I've come across. I'm familiar with the Knorr Tomato Bouillon with Chicken and we always keep at least one jar of it on hand. Neither my wife nor myself have a sensitivity to gluten, so the fact that this is a gluten free recipe doesn't really affect us. The homemade enchilada sauce looks really good, and we'll be giving this recipe a try, especially with including some beef or chicken between each layer.
