Cooking Time5 min

  • 30 tortilla chips
  • 1 small de-seeded tomato, chopped
  • 1 small de-seeded bell pepper, chopped
  • 1 scallion, chopped
  • 1 de-seeded jalapeño (fresh or pickled), sliced
  • 1/2 cup grated cheddar, mozzarella or mix of those cheeses.
  • 1/2 teaspoon dry oregano
  • pinch of cumin
  • 2 tablespoons chopped cilantro

  1. Try to find whole and large chips. Take large tray or another oven safe dish and arrange the chips in one layer. Add one or two tomato pieces on top of each, then one or two pieces of bell pepper and add jalapeño as well.

  2. Sprinkle chips with oregano and cumin.

  3. Cover whole dish with cheese and as a last layer place scallions.

  4. Place in oven at 400 degrees F for 5 minutes or until cheese is melted.

  5. Before serving sprinkle with cilantro.

  6. Serve with salsa, guacamole or sour cream on the side.
