- Corn tortillas
- Radishes (sliced with mandolin)
- Cotija cheese
- Cheddar cheese
- Shredded lettuce
- 2 lbs Flank steak
- 2 limes juiced
- 2 tablespoons garlic powder
- 1/2 cup orange juice
- 1 cup chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 2 tablespoons white vinegar
Combine lime juice, garlic powder, orange juice, cilantro, salt, pepper, vegetable oil, and vinegar in a gallon size reusable bag. Mix it up by squeezing bag.
Put entire steak into bag. Seal tight. Refrigerate for at least two hours, but preferably overnight.
Place meat in a swiss diamond grill pan on medium heat. Discard excess marinade. Cook for 7-10 minutes each side until cooked to preference. We usually do medium or medium rare.
Once cooked, let rest for 10 minutes. Cut against grain and serve in tacos with desired toppings like cotija cheese, lettuce, and fresh radishes.
