Ingredients

  • 1 1/2 pound lean ground beef
  • 1 cup tomato juice
  • 1 cup crushed Saltine crackers
  • 1 egg
  • 1/4 cup finely chopped onion
  • salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a large bowl combine meat, tomato juice, crackers, egg, onion, salt, pepper, garlic powder, oregano and cheese.

  3. Mix to combine well.

  4. Press into a loaf pan, or two mini loaf pans.

  5. Bake for 1 hour, remove from the oven and let rest for 5-10 minutes. Drain off any fat and then slice to serve.

This looks very dry.I take 2 slices wheat bread let soak in 1/2C.milk set aside.I then take 1 pound ground beef add 1 egg,1 white onion finely chopped,2 celery stalks finely chopped,sprinkle in Garlic Powder add the soaked milk bread mixture.Take 1/2 of meat mixture form into a loaf add mashed potatoes that's mixed with a can of corn drained, in the middle of it then take other mixture place this on top.Bake 375 for 40 minutes then top with open pit BBQ sauce Bake til bubbly for about 15 minutes.Or if you don't want the mashed potatoes in the middle form into 1 huge loaf or mini loaves.My brother loves mashed potatoes corn mixed together then adding the meat to it.It's really good.

This meatloaf sounds delicious...I actually like to use saltine crackers in mine as well, although I've never tried adding cheddar before. The first thing I thought of after reading this recipe is, what a perfect recipe for meatloaf burgers (as strange as that may sound). Just toast your preference of roll (I'm thinking onion bagel), and then add all of your favorite condiments. I'm definitely gonna give it a try!

This recipe sounds like good old fashioned meatloaf. I will try this recipe, even though I think my meatloaf is the greatest. This has ingredients that are quite different from my standard recipe, so my family will be in for a surprise. I will serve this with my favorite side dishes--mashed potatoes, green beans, and cornbread.
