Ingredients

  • 2 pounds ground beef
  • 3/4 cup quick oats, uncooked
  • 2 eggs, well-beaten
  • 1/4 cup chopped onion
  • 3/4 cup tomato juice
  • 2 teaspoons salt
  • 1 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons ketchup
  • Sauce
  • 2 tablespoons whole grain mustard
  • 2 tablespoons brown sugar

It's pretty awesome how many different varieties and possibilities there are when it comes to meatloaf...but I don't recall ever seeing mustard, red pepper flakes and brown sugar in one. I'm not really a fan of ketchup but I have tried using grape jelly and it's really good regardless of how weird it may sound. lol

Leave a comment...I love meatloaf and I usually make it with bread crumbs in the mixture as opposed to the oats. Are the oats what makes this an Amish recipe? I'm wondering what the texture difference really is? I like to add some bbq sauce to the top of it as well. It gives it such a good burst of flavor.

I'm really glad that I fond this recipe. It is really close to my Mum's recipe. I think that I might substitute the tomato juice though. I just don't think that it has enough flavour for my taste. I would maybe try adding in some tomato paste or some bbq sauce along with the ketchup to amp up the flavour. If you like the taste of a glaze on your meatloaf, it's also fun to put a bit of bbq sauce on top for the last few minutes of cooking. It's really yummy!

I love meatloaf and I've had quite a number of varieties. This looks like a really basic, but quite good recipe. I'll often use a mix of pork and hamburger when I make it, and I'm tempted to use some spaghetti sauce or V-8 juice in place of the plain tomato juice. The sauce looks interesting, and I plan to make up some to try.
