Yields4 mini meatloaves

Preparation Time10 min

Cooking Time1 hr 20 min

Ingredients

  • 1 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 onion, chopped
  • 1 1/2 cup bread crumbs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/8 teaspoon ginger
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 3 eggs
  • 3 tablespoons apple cider vinegar
  • 4 tablespoons dark brown sugar
  • 1/2 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dry mustard

You will need 4 mini loaf pans with lids for this recipe.

Directions

  1. In a large mixing bowl combine the beef, pork, onion, bread crumbs, nutmeg, allspice, ginger, salt, pepper and eggs. Mix well.

  2. Lightly spray the mini loaf pans with cooking spray. Divide the meat loaf mixture evenly between the four loaf pans leaving room at the top for the sauce.

  3. In a small bowl combine the apple cider vinegar, brown sugar, ketchup, Worcestershire sauce and dry mustard. Mix well and evenly divide the sauce on top of each meatloaf.

  4. Cover each mini loaf pan with the lid and be sure to mark the contents and date when made. You may want to cover each in foil as added protection from the freezer.

  5. You can bake right away in a 350 degree oven for 35-50 minutes (do not leave the plastic lid on). If taking from the freezer, bake for 60-80 minutes.

I was a little nervous about trying this since it's freezer meatloaf, but I was pleasantly surprised! The meatloaf was still really moist and had a ton of flavor.

Yum! I love meatloaf, and this dish was moist and flavorful with a great texture!

What a brilliant idea! So smart to be able to do all the prep work for meatloaf ahead of time, and simply grab it out of the freezer and cook it day-of. Why didn't I think of this before? The flavor is great, and freezing doesn't do anything negative to the texture, which I had wondered about. The meatloaf stays moist and juicy, and this recipe makes my life easier.
