Garides Giouvetsi (shrimp and Feta Bake)

Ingredients

  • 1 lb. large shrimp or prawns (about 12)
  • 1/4 cup olive oil
  • 1 small yellow onion, minced
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 2 large tomatoes, diced
  • 1/3 cup dry white wine
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon crushed dried-leaf oregano
  • salt to taste
  • freshly ground pepper to taste
  • 1/4 cup crumbled feta cheese (1 oz.)
  • chopped parsley for garnish

Instructions

Serves 4.. Clean and devein shrimp or prawns, removing shells but leaving shells on tails intact. Refrigerate. Heat olive oil in a large skillet. Add yellow onion, green onions and garlic. Saute until onions are tender. Add tomatoes, wine, 2 tablespoons chopped parsley, oregano, salt and pepper. Cook over medium heat 30 minutes or until sauce thickens. Preheat oven to 350F (175C). Spoon half the tomato sauce into a medium casserole. Cover with shrimp or prawns. Top with remaining sauce. Sprinkle cheese evenly over sauce. Bake 15 to 20 minutes or until shrimp is pink and cheese is golden brown and slightly melted. Garnish with parsley.

Omg, this recipe sounds amazing and I'm thinking it would go perfectly with a kale or quinoa salad. I love shrimp but I get so bored using the same recipes over and over again...so this is a pleasant surprise, as I've been craving shrimp recently. Does cooking wine have the same results of dry white wine? And do you know the difference between the two, I've never cooked with an actual drinking wine before?
