Afelia is delicious Greek pork cooked in coriander. Try this recipe tonight.
- 2 pork shoulder
- 1 cup red dry wine
- 3 Tsp dry coriander
- 1/2 cup olive oil
1. Cut the pork in bite size cubes. Heat oil in frying pan, until hot but not smoking. Add pork. Stir for 2 or 3 minutes. Add salt and pepper to your taste.
2. Reduce heat, cover and simmer. Crush coriander and mix with red wine. When meat is done, strain out oil and return meat to pan. Add wine/coriander mixture and keep cooking for a few minutes until alcohol has evaporated. Serve over rice, or mashed potatoes, or with french fries. Serves 3-4.
