Ingredients

  • 2 piece of Fish cleaned and washed
  • Salt and pepper for the rub
  • 1 cup tomatoes minced or diced
  • 1 cup onions diced
  • 1 tablespoon ginger minced
  • 1 tablespoon olive oil optional
  • Salt and pepper to taste
  • Soy sauce
  • calamansi

Instructions

  1. Preheat the oven to 200 C or 392 F.

  2. Rub salt and pepper on both sides of the fish.

  3. In a small bowl, mix together tomatoes, onions, ginger, olive oil, and salt and pepper.

  4. Use a spoon or your hands** to put the salsa into the fish’s belly and mouth.

  5. Now, wrap the fish in a piece of aluminum foil, separately.

  6. Bake in the oven for approximately 30 minutes.

  7. Remove from the oven and serve with hot rice.

  8. Best enjoyed hot with your favorite dip or sawsawan alongside a vegetable side dish like Talbos ng Kamote Soup.
