Classic Seafood Risotto in White Wine

"Classic seafood risotto in white wine is the quickest way to upgrade your weeknight meal into a sophisticated dinner. Minimal effort. Outstanding taste. You in? Mom and I tried out a few recipes. One that stayed with me is this classic seafood risotto. Seafood is first simmered over garlic on olive oil, then continued simmering with the addition of crisp rice which slowly softens in white wine. Aroma of this dish will stay in your home for a while. What about the taste? Sophisticated, grown up. It feels like a restaurant meal."

Risotto is one of those fabulous comfort foods that just warms my heart and soul! This one looks so elegant and flavorful! I have never seen that frozen seafood blend you mentioned at the stores where I shop, so I will probably use a mixture of fresh shrimp and clams from the seafood counter. I think I'll add them later in the cooking process since they cook very quickly, and I don't want them to become tough.

My dad's favorite dish to order out at a seafood restaurant is risotto. I have actually never made risotto because I never think that I will make it good enough! My friend's dad is a chef and he always makes the best risotto so I am not sure I can compete with that but this recipe looks like a great one to try!
