Bang Bang Shrimp Quesadillas
These Bang Bang Shrimp Quesadillas are a delicious, homemade twist on Bonefish Grill's Bang Bang Tacos. They're a healthier version, too, since the shrimp are pan-fried in less oil. You can also make as much of the mouthwatering sauce as you want to cover the crispy shrimp. The sauce is the perfect balance between creamy and spicy. We were gifted a huge bowl of freshly harvested shrimp today and this Bang Bang Shrimp Quesadillas seemed like a great recipe to use some of them for. I used a lot less than 1 cup of corn starch and we added chopped garlic and chili fresh from the garden. Oh my, those quesadillas were so good that we could easily have eaten double the quantity.

Yes, Rachel Anne, I never thought of quesadillas with shrimps prior to this but I wanna try these Bang Bang Shrimp Quesadillas and see if my Mexican food crazy kids will like this quesadilla dish. Can't wait to make this for them and for me, too.

I made some Tex-Mex dish with shrimp before and it was really good. But, it called for the large shrimp and you had to roll them up in the tortilla. I like the idea of using smaller shrimp so they are easier to work with. I think they really have better flavor also. If have have a large electric skillet, you might be able to cook two at a time.

I love quesadillas because they're so fast. I'd never thought of putting shrimp in them. These sound delicious.
