Ingredients

  • 1 (12-ounce) can tuna (drained and flaked)
  • 1 (6-ounce) can salmon (drained and flaked)
  • 2 egg whites (slightly beaten with a fork)
  • 1/2 cup green peas
  • 1/2 cup grated parmesan cheese
  • 1 cup panko bread crumbs
  • 1/8 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 pound parsley
  • 1 clove garlic (or 0.5 tsp garlic powder)
  • Canola oil spray

Instructions

  1. Preheat oven to 375 degrees.

  2. Spray nonstick sheet pan liberally with oil. Mix all ingredients in a large bowl until the egg whites are worked in well.

  3. Form 6 patties with hands and press firmly so they will hold together and place on an oiled sheet pan. Spray the top of patties and bake for 12 minutes. Flip patties, spray tops, and bake for an additional 10 minutes or until golden brown and cooked through.

  4. Garnish with lemon. Serve on a roll or a bed of greens with cocktail or tartar sauce, ketchup, spicy aioli, or honey mustard. We paired it with a baked sweet potato that is also packed with vitamins and nutrients.
