This recipe looks really good and a great alternative for a quick and easy weeknight meal. i would probably omit or substitute some of the ingredients (like the fish sauce!) and the chicken to make it vegetarian. I love the taste and heat of fresh ginger too. I can't wait to try this one!!

You could use any type of Asian style noodles for this recipe. I like the thin little rice noodles that are about as thin as angel hair pasta. I like to make mine a little bit more spicy, so I added quite a bit more sriracha than the recipe calls for. The peanuts give it a great crunch, and the fresh ginger and fish sauce really give it a tasty and authentic flavor!

Please do not be deterred by the long ingredients list because you will find that most of them are already in your pantry cupboard or refrigerator. Also, and surprisingly (given the many ingredients) this pad thai is quick and very easy to make and the resulting dish is nothing short of delicious! We made it for dinner tonight and the family enjoyed it so much that they all had seconds.

I love pad thai and almost always order it if it's on the menu! I have always wanted to make my own at home but was a little bit worried it wouldn't come out as good. This recipe looks stellar! One question Are rice stick noodles found in a general grocery store or would I have to go to a specialized Asian food market?
