Ingredients

  • 1 large Ripe mango, peeled and chopped
  • 1 (1-pound) Full-fat milk
  • 1 tablespoon White vinegar
  • 2 tablespoons Water
  • 1 cup Milk powder
  • 3 cups Milk (for cooking with milk powder)
  • 1 cup resh malai (or replace with fresh cream)
  • 2 tablespoons Curd (yogurt)
  • 1 cup Sugar (adjust according to mango sweetness)
  • 5 cloves Green cardamom powder
  • Saffron strands
  • Chopped dry fruits, for garnish
  • 2 tablespoons Milk powder, for coating ladoos (optional)

Instructions

  1. Boil ½ litre milk. 

  2. Mix vinegar with water and add to curdle the milk. Let it rest for 2–3 mins. 

  3. Strain and wash paneer to remove sourness. 

  4. In a mixer, blend mango pulp and paneer into a smooth paste. 

  5. In a pan, mix milk powder and milk. Cook on low till slightly thick.

  6. Add mango-paneer paste. Mix well.

  7. Stir in malai (or cream) and curd. Cook till mixture thickens and leaves the sides.

  8. Add sugar, cardamom powder, saffron. Cook till mixture forms a dough-like consistency.

  9. Cool slightly.

  10. Shape into laddoos.

  11. Roll in milk powder and garnish with dry fruit
