This oatmeal cookie crust works perfectly in this light and fluffy lemon tart! It is a really great base for a fruit-flavored cheesecake or a key lime pie, as well! I'd recommend adding a garnish of lemon slices on top of this tart just because it can look a little plain from the outside!
