If you like pineapple upside down cake, you'll love this easy cupcake recipe. Jumbo Pineapple Upside Down Cupcakes are just like the cake, but made in a jumbo muffin tin. What we love about this pineapple dessert is that it only requires 4 ingredients. You'll want to rush your way through the yellow cupcake just to get to the gooey sweet pineapple layer at the bottom. It's a good thing these cupcakes are jumbo, or else we bet you couldn't eat just one.

  • 1 package yellow cake mix
  • 1/3 cup butter or margarine, melted
  • 2/3 cup brown sugar
  • 1 (20-ounce) can crushed pineapple in juice


  1. Preheat oven to 350 degrees F.
  2. Mix cake mix according to package.
  3. In jumbo muffin tins, place jumbo muffin cups.
  4. Drip 1 tablespoon of melted margarine into each cup, 1 heaping tablespoon of brown sugar in each cup.
  5. Add pineapple, then pour batter into cups until 3/4 full.
  6. Bake for 20-25 minutes.

Omg yum! Pineapple upside down cake was the first recipe I ever baked in Home Economics back in the day...so it's always been one of my favorites. And in a jumbo cupcake too? Yes, and please! This is such an easy recipe to make but I'm wondering...with the pineapple baked into the cupcake, is it ok to freeze the extra for later indulging? Some chopped up maraschino cherries mixed with the pineapple would be a yummy addition as well as the whole cherry set right in the middle for an authentic pineapple upside down cake feel.

Where is the pineapple? I'm familiar with the recipe so I know where the pineapple goes. New cooks may not.
