One-Pan Chicken and Potatoes

Make a tasty dinner in just one pan with our yummy one pan chicken, potatoes, and carrot bake.

Making one pan recipes is an easy way to put together a tasty dinner with little to no time. This yummy option, for example, only takes about 30 minutes to bake. All you need to do to complete this recipe is chop up your desired veggies (feel free to add any more you might enjoy) and toss them in the suggested olive oil and spices. Since this dinner uses chicken and veggies in one big pan, clean up is sure to be a breeze too. If you're looking for a fall dish, consider replacing the Yukon Gold potatoes with sweet potatoes instead. Just be sure to give them a poke before you serve them since sweet potatoes can take a few more minutes to cook through.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 6 Yukon Gold potatoes, quartered or halved
  • 2 cups baby carrots
  • 1 red onion, cut in quarters
  • 10 garlic cloves, peeled and left whole
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 375°F. Line a baking sheet with aluminum foil.

  2. Arrange the chicken, potatoes, carrots, onion, and garlic cloves on the baking sheet in one even layer. Sprinkle the chicken and vegetables with salt and pepper and the rosemary, thyme, and parsley. Drizzle everything with the olive oil. Gently toss with your fingers and rearrange in one layer.

  3. Bake for 35–40 minutes until the chicken is cooked through and the vegetables are tender.

  4. Transfer to a serving dish and serve immediately.

For a while, when we were first married, I thought the only seasoning my husband was aware that existed was rosemary. It used it to prepare a lot of the dishes he cooked and I came to be fond of it. He seldom cooks and I tend to cook meals that do not call for such herbs. Do I have a surprise in store for him. Thanks for this easy recipe.

I am a true fan or one pan meals. When time is of the essense and you are in need of a balanced home cooked meal, this recipe ranks high on the list. All you need now is a side like green beans, peas or maybe a salad you have a complete dinner ready.

We love this type of meal and this recipe is definitely to be recommended. Chicken flavored with rosemary is always good and in my opinion roasted garlic is just sublime. We used sweet potatoes because that is what was available. It all took mere minutes to prepare and was very very good to eat.
