I love to eat the filling in stuffed bell peppers so this is great when I'm in the mood just to eat the stuffing. This casserole is a variation of the traditional recipe for stuffed bell pepper filling. The ingredients impart distinctive Italian flavor throughout the dish. For a lighter version of this recipe, I would use lean ground beef or ground turkey, and reduced fat shredded cheese. Instead of cheddar cheese, I would use Parmesan cheese.

This does look good. However, the ingredients don't match the way I make stuffed peppers. I use other seasoning and tomatoes and not marinara sauce or bread crumbs. I love rice. It is a great stretcher for the food budget. It is also quicker than making regular stuffed peppers. I am guessing the baking dish is a small one, like 8x8, but it doesn't say.
