Terrific Turkey Cabbage Bake

Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground turkey
- 1 cup onion, chopped
- 1 tablespoon finely minced garlic
- 1 teaspoon caraway seeds
- 8 cups chopped cabbage (about 1 head 6 inches across)
- 2 cups shredded Cheddar cheese
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 1/2 cup breadcrumbs
Instructions

Preheat oven to 375 degrees F. Lightly spray an 8x12-inch bake dish with cooking spray.

Add vegetable oil to a large skillet over medium-high heat. When it's hot, add the onion and cook until translucent, about 3 minutes. Add garlic and caraway seeds and continue to cook and stir for 2 more minutes.

Add the turkey and cook until no longer pink, breaking up clumps of meat with the back of a spoon. Add the cabbage and cook, stirring, until cabbage is translucent, about 4 minutes.

Turn off heat, add the cheese, sour cream, salt and pepper, and stir to combine evenly. Pour into the prepared bake dish and sprinkle with breadcrumbs.

Bake 40 minutes until lightly browned.

This looks fantastic! Cabbage is one of the under-utilized veggies in our house, and I just recently found out it was loved by all. All of the other ingredients are staples. Just need to add cabbage to my grocery list. Does anyone see any issue with doubling and adding to a 9x13 casserole?
