This sounds like a delicious recipe for eggplant parmesan. The casserole is a meatless main dish, and great for people who want to consume less meat, and adopt healthier eating habits. Since I don't like very spicy food, I would omit the hot pepper flakes. To make this dish slightly healthier, I would use low fat mozzarella cheese. As a side dish for this casserole, I would serve spaghetti with marinara sauce.

The first time I made this the eggplant was mushy. Seems I sliced it too thin. What does that mean? Anyway I soldiered on and made it again, cutting thicker slices of eggplant (about 1cm) and that seems to have done the trick and it was delicious. The sauce is a little fiddley to make but well worth the effort. All round it is a very nice recipe.

Can't wait to make this! I love eggplant but hate when it's fried--it completely negates the health factor! So glad I found a good no-fry recipe.
