Crunchy Beef and Broccoli Casserole
This easy, one pot meal is inspired by those familiar Chinese beef and broccoli dishes from your beloved takeout restaurant. Made with both rice and chow mein noodles, this Crunchy Beef and Broccoli Casserole is absolutely delicious. After baking in the oven, the chow mein noodles get crispy, giving this beefy, broccoli casserole a crunchy texture. The soy sauce gives it just the right amount of everyone's favorite Chinese-style seasoning. This non-traditional casserole recipe for Crunchy Beef and Broccoli Casserole would be the perfect casserole to bring to a potluck or make for a casual family dinner.

This is a good Americanized take on beef and broccoli, when you just want to throw something together without having to babysit a hot wok. Since it uses ground beef rather than steak, it is very easy on the budget! I love the crunchy chow mein noodle topping, it is very unique. I like to use these to top soups and to add texture to salads in place of croutons.

This would be great to make the family. They love chow mein, but it is so full of salt. Cream of mushroom and cream of celery soup have low sodium versions so that might be healthier. I will check into that. I think carrots would be a good addition also.
