Cheesy Hash Brown Casserole
A great way to get your calcium is through cheese. I say the cheesier, the better! This hash brown casserole recipe is baked to perfection.

Ingredients
- 2 pounds bag frozen hash browns (diced type)
- 1/2 cup onion, minced
- 16 ounces sour cream
- 1 can cream of chicken soup
- salt and pepper, to taste
- 2 cups sharp cheddar cheese, shredded
- 1 stick butter, melted
- corn flake crumbs
Instructions
- Preheat oven to 350 degrees F.
- Grease 9 x 13 baking pan.
- In large container, combine hash browns, onions, sour cream, and soup. Add salt and pepper; blend well.
- Place mixture in prepared pan.
- Top with cheese, pour on butter, and cover with cornflakes crumbs.
- Bake in 350 degrees F oven for 60-90 minutes.

Instead of corn flakes, I used cheez-its and cambells makes a cream of chicken mushroom soup. That way I get a taste of each. I did not use the whole 16oz of sour cream. My family loved it, and I did too...

I am going to make this casserole tomorrow morning. It's just for me, so I can warm portions of it all week. Add a biscuit and/or a sausage link, and breakfast is done!
