    Buttery Crumb & Cod Casserole

    Mix a plethora of veggies with a stack of Ritz crackers and you get a Buttery Crumb & Cod Casserole. An additional hint of Tabasco sauce in this casserole recipe gives your taste buds a kick!

    Ingredients

    • 1 1/4 cup cracker crumbs (Ritz or Town House), coarsely crushed
    • 1/2 cup butter, melted
    • 1/2 cup celery, finely chopped
    • 1/2 cup green bell pepper, finely chopped
    • 1/4 cup green or mild onion, finely chopped
    • 1/4 cup parsley, finely chopped
    • 1 teaspoon dry mustard
    • 1/2 teaspoon salt
    • 3 tablespoons black olives, sliced
    • 3 or more drops Tabasco sauce or other hot sauce
    • 1/4 cup milk
    • 1 to 1 1/2 pounds fresh or frozen cod, cut into 1 inch cubes

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. In a large bowl, combine all ingredients, adding fish last. Mix well.
       
    3. Turn into 1 1/2 quart buttered baking dish.
       
    4. Bake 20-30 minutes, or until fish flakes easily and crumbs are golden brown.
       
    5. Can be served with lemon wedges.
