Orange Pineapple Cake
No matter how you slice it, this Orange Pineapple Cake is a wonderful dessert for a summer party or a barbeque get together. Mandarin oranges are mixed right into the cake batter, giving it a wonderful flavor. Pudding and whipped cream combine to create a wonderfully creamy frosting; pineapple is mixed in as well giving surprising little bursts of juice and tartness. - For Cake
- 1 (11-ounce) can mandarin oranges
- 1 box yellow cake mix
- 2 eggs
- 1/3 cup cooking oil
- For Frosting
- 1 package instant vanilla pudding
- 1 (8-ounce) can crushed pineapple
- 1 carton whipped topping
Combine oranges, cake mix, eggs and cooking oil and beat at least 3 minutes.
Pour into greased 9x13-inch baking pan. Bake according to cake mix directions.
- Let cool.
In a separate bowl, combine pudding and pineapple (with juice) and mix well. Fold in whipped topping.
Spread on cooled cake.
