Quiche recipes can be daunting with their homemade crust recipes and complex fillings. Sometimes the recipe names themselves are scary! However, a Zucchini Ricotta Quiche recipe, as difficult as it sounds, cuts corners in all the right places to make it a quick and easy breakfast or dinner. With plenty of cheese and zucchini, this will keep you full for hours. The recipe uses a prepared 9-inch pie crust to save you from cutting butter into flour and waiting hours for your complicated, homemade crust to refrigerate. Great with both zucchini and yellow squash, try mixing up the vegetables with anything you have in your garden.

Mama Mia I love this Zucchini Ricotta Quiche recipe. It is so quick and easy to make, and so full of rich Italian flavors. Ricotta, garlic, mozzarella, how can you go wrong? I can't wait to try this with yellow squash. I may even go rogue and try it with eggplant. The only thing I did different was I did not use the walnuts, just a personal preference.
