Ingredients

  • Oil: 1 tablespoon
  • Finely chopped onions: 2 tablespoons
  • Shredded cabbage: ¼ cup
  • Mixed bell peppers: ¼ cup
  • Broccoli: ¼ cup
  • Salt to taste
  • Black pepper: 2 teaspoons
  • Tofu: 2 tablespoons
  • Chili flakes: 2 teaspoons
  • Basil: 1 tablespoon
  1. For the stuffing: Heat oil in a pan, add onion and sauté it until slightly soften. Add chopped vegetables and season it with salt and pepper to taste. Add tofu, chili flakes, and basil leaves. Combine the mixture well.

  2. For the Vegetable Boat: Cut the whole wheat bread on top to make a cavity in the bread. Stuff the vegetable mixture in the bread’s cavity and top it with cheese. Preheat a deep pan, place the vegetable boat in the centre and cover with a lid. Cook it until the cheese garnish on top melts.

  3. Tiffin Siders: Raisins and pineapple (or any other fruit of your choice).

All parents are constantly trying to find new, interesting, filling and HEALTHY school lunch ideas and this one is just perfect for adding to your list of options. Our kids enjoyed theirs so much yesterday that they've asked for the same lunch on Monday! I prepared the veg and bread the the previous evening so that, in the morning, all that had to be done was pop it in the oven.
