Veggie Egg Boats

Ingredients
- 6 French bread rolls
- 6 eggs
- 1/4 cup heavy cream
- 1/4 cup sharp Cheddar cheese
- 1/4 green bell pepper, diced
- 1/4 red bell pepper, diced
- 2 green onions
- 2 tablespoons Italian parsley, chopped
- Salt and pepper

Instructions

Preheat oven to 350° F.

Sauté bell peppers to soften and allow to cool.

Cut tops off of each roll and remove some of the bread inside.

In a large mixing bowl, whisk together eggs and cream. Add remaining ingredients and season with salt and pepper.

Carefully pour the mixture onto each roll and place onto a baking sheet.

Bake 20 minutes or until the eggs have puffed up and are lightly golden brown.

Allow to cool slightly and serve.

This sounds amazing for breakfast or any reason at all really...and I love that it's got veggies and French bread in it but since I'm trying to avoid carbs, I'm actually contemplating trying this recipe and instead of using the bread as the vessel for the eggs, baking the egg mixture into some portabella mushroom caps. Can you imagine how much flavor it'll add to the eggs? Yum!

I will be making this recipe this weekend. We are going to the market tomorrow an I only need to buy the bread, some mushrooms, which I will cook with the green pepper and some onions. I am going to prepare this Friday night and just pop it into the oven Saturday morning.

I made these Veggie Egg Boats for breakfast last weekend and we all loved them. We had just one bell pepper so added a few chopped mushrooms and some crumbled feta. The younger children thought they were great fun and asked me to make them again soon which I will be very happy to do as they are quick and easy and tasty too.
